MSPrebiotic® Kefir Parfait with Coconut Cookie Crumble
This kefir parfait looks like a dream come true - and tastes like one too!
Ingredients
Cookie Crumble:
- 1/2 cup Medjool dates
- 1 cup Shredded coconut
- 1/2 cup Walnuts, raw or toasted
- 1/4 tbsp Salt
- 2 tbsp MSPrebiotic®
Parfait:
- 3 cups Plain whole milk kefir (or coconut kefir for dairy free)
- 2 tbsp Maple syrup
- 1 1/2 cup Fresh strawberries, sliced
- 1/4 cup Dark chocolate chips
Instructions
- For the cookie crumble: Add dates, shredded coconut, walnuts, salt and MSPrebiotic in a food processor and process until it starts to come together and form a sticky ball. Set aside.
- To assemble the parfait: Mix kefir and maple syrup. Divide sweetened kefir into 6 mason jars or glasses
- Garnish parfait with equal portions of cookie crumble, sliced strawberries, walnuts, and chocolate chips on top
